Rock sugar: 200g
Vinegar (rice vinegar, apple vinegar, black vinegar, etc.): 200cc
(Prepare fruit, rock sugar, and vinegar in a 1:1:1 ratio.)

This time we have prepared "Gold Kiwi" and "Blueberries"! The blueberries are frozen foods that can be used as a topping for yogurt.

If you find peeling fruit a hassle, try using frozen fruit or fruits that don't require peeling, such as strawberries or raspberries. If you use seasonal fruits, you can enjoy different fruit vinegars at different times.

1. Wash the storage jar and boil it in hot water.

You can use jars purchased from a 100-yen shop. However, since you will be boiling the jars, be sure to check their heat resistance. Be sure to boil them thoroughly to sterilize them and prevent food poisoning and mold growth.

2. Place fruit and rock sugar in a jar

Fill a storage jar with boiling water and alternate the fruit and rock sugar layers.

This time, we used a 1:1:1 ratio of fruit, rock sugar, and vinegar, but you can adjust the amount of sugar to your liking. If you use less sugar, you can use it as a seasoning.

3. Pour in the vinegar

Pour in the vinegar prepared in step 2. Prepare your own vinegar of choice. If you don't like sour foods, we recommend apple cider vinegar or black vinegar, which have a milder acidity.

Store in the refrigerator for about a week, shaking the jar once a day, and it's ready to serve. This time I pickled each fruit separately, but it's also delicious if you mix them together.

*If you soak it for too long, sediment will appear, so please remove the fruit inside after about two weeks.

How to enjoy and use fruit vinegar

The best thing is to mix it with carbonated water and drink it as squash! The pickled fruit is delicious just as it is, but if you lightly mix it with granulated sugar and heat it in the microwave without covering it with plastic wrap, it turns into vinegar jam.

Mix it with cold milk to thicken it and enjoy it like a yogurt drink. It's also delicious topped with pickled fruit. We also recommend pouring it over yogurt or ice cream like fruit syrup.
